Testimonials

Adam is an incredible educator. We were thoroughly and patiently inducted into the depths and complexities of wine, making every glass of wine since a journey with an altogether different and more resonant level of experience.

Adam Chapman

Educator + Reviewer + Distiller

Adam Chapman has been active in the wine and spirit industry for 35 years, mostly as a winemaker for wineries in France (Burgundy,  Ardeche & Pomerol) and Australia (Barossa Valley, Hunter Valley, South Burnett Valley and the Granite Belt). He has held leadership roles for numerous wineries, notably 2 large Queensland wineries where he developed projects between $2 and $30 million operation from green field start-up sites.

This is where his skills and attention to detail have created demonstrable success, not only in winemaking, blending and tasting, but also in winery design, process flow streamlining, eco installations, waste management and plant installation, and environmental building design including co-generation and tri-generation.

For the last eight years his focus has been on wine and spirit education, teaching the WSET wine and spirit courses from Level 1 to Level 3 in wines and Level 1 and 3 in spirits. Adam is currently the only WSET educator in Australia that can teach Level 3 in Wines and Level 3 in Spirits.

Level 3 Award in spirits

Great course. A lot of good coverage of a wide range of topics. I really enjoyed myself. I tried so many different spirits that I had never come across and a lot of others that I always wanted to try but couldn’t afford on a day-to-day basis. Great selection of good quality spirits for the tastings. Adam always erred on the side of higher quality rather than standard or commercial stuff where there was scope for him to choose between two quality levels. The content was fantastic, I learnt so much, I just wished I’d studied even more so that I could have come away with so much more knowledge and understanding given the sheer volume of the content. Given the extraordinary amount of course content to cover, Adam did a great job getting us to understand the entire breadth of everything there was to know. A big thank you to Adam for all his efforts and encouragement!
