Adam Chapman
Educator : Distiller : winemaker
Adam Chapman has been active in the wine and spirit industry for 35 years, mostly as a winemaker for wineries in France and Australia (Barossa Valley, Hunter Valley, South Burnett Valley and the Granite Belt). He has held leadership roles for numerous wineries, notably 2 large Queensland wineries/distilleries where he developed projects between $2 and $30 million operation from green field start-up sites.
This is where his skills and attention to detail have created demonstrable success, not only in winemaking, blending and tasting, but also in winery design, process flow streamlining, eco installations, waste management and plant installation, and environmental building design including co-generation and tri-generation.
For the last ten years his focus has been on wine and spirit education, teaching the WSET wine and spirit courses from Level 1 to Level 3 in wines and Level 1 and 3 spirits. Adam was the first educator in Australia that can teach Level 3 in Wines and Level 3 in Spirits.
Adam is also a content writer for Certificate IV in Artisan Fermented Beverage (Distilling), as well as a Australian Distillers Assoc, Distillery Safety Course.
He is currently head distiller at a new distillery on the Sunshine Coast. Avid WHS Safety in Distilleries.

CHRISSY ANDREW – Educator WSET Level 1 and 2 Award in Wines in BRISBANE
Born in New Zealand and a globetrotter by nature, I have carved a unique path through diverse cultures and experiences. My overseas journey began in Japan in 2002 and led me to Guangzhou, China, where I lived, worked, and studied from 2003 to 2006, and again from 2008 to 2010 with a 2 year stint in Canberra inbetween. I met my South African husband in 2009 in Guangzhou, China, and together we embarked on a new chapter in South Africa at the end of 2010.
With a double degree in Chinese language and accounting from Massey University under my belt, I started working as an accountant in South Africa. After a few years of visiting many wineries in the Western Cape, I started a wine blog and founded a wine club in Cape Town in 2011. My professional pivot to the wine industry came in 2013 as a tasting room manager in Stellenbosch, followed by a National Sales Management position for another winery from 2014 to 2015.
Since 2016, I nurtured relationships and expanded markets as the Africa Sales Manager for a prestigious Stellenbosch winery. My relocation to Australia in 2018 marked a transition to Sales Manager for the Asia Pacific region for the same company, a role I continue to fulfill with zeal. My expertise is backed by a WSET level 3 certificate completed in 2016, and I am currently pursuing the WSET diploma (started January 2024). Additionally, I am qualified to teach WSET levels 1 and 2, having completed the ETP course in 2024.
ROB HOOD – Educator WSET Level 1 and 2 Award in Wines in Sunshine Coast.
Rob has worked in hospitality for more than 35 years. Catering, fine dining, bars, cafés and for the last 24 years he’s worked for Qantas. You name it, he’s done it!
Along with being a Customer Service Manager on international flights, for the last decade Rob has been integrally involved in Qantas’ wine program. As a Lead Facilitator he’s trained hundreds of cabin crew and lounge staff in their bespoke wine education program. He is also a member of the Wine Selection Panel. Alongside some of the top Australian sommeliers, Rob plays a key part in selecting all wines to be served on Qantas flights as well as in Lounges.
Rob has completed his WSET Level 2 and 3 in Wines and is also trained as an educator for WSET Level 1 and 2 in Wines for Wine and Spirit Inc #2168 APP. Outside of Qantas, Rob is seen in the Market Street Wine store in Maroochydore.
Rob is liaising with Adam Chapman the nominate educator with Wine and Spirit Inc and soon to be starting the huge WSET Diploma in Wines.
SIMONE TRIGGIANESE – Educator for WSET Level 1 and 2 Award in Wines – Northern Territory
Simone Triggianese is a Hospitality Lecturer, Sommelier, and Restaurant Manager born in Milan, Italy, with over fifteen years of experience in the hospitality industry, working alongside multiple high-end venues worldwide.
After experiences in Milan, London, and Barcelona, he decided to migrate to Australia and fell in love with the country. He started in Perth in 2014, moved back to Down Under, and decided to settle in Darwin, where he pursued his career in the hospitality industry.
After many years in the industry, he transitioned to a hospitality education position to teach and train new generations at Charles Darwin University TAFE.
Passionate about hospitality, customer service, food and beverage, wine, and spirits, multiple language speaker (English/Spanish/Italian). Simone’s academic career started with a master’s degree from the University of Milano Bicocca (UNIMIB) in environmental science and a post-graduate master’s in geographic information systems from the Universitat Autònoma de Barcelona (UAB).
However, the hospitality industry has always been his passion and main area of expertise. He developed a remarkable career in the field, achieving a Diploma of Hospitality Management and multiple NT Gold Plate Awards for Restaurant of the Year in 2022 and 2023 as a manager and sommelier of Pee Wee’s at The Point Restaurant.
With expertise in wines and mixology, he holds a Wine & Spirit Education Trust (WSET) Level 3 certificate in wines, Level 2 in spirits, and Level 2 in beer. Simone is qualified to teach Level 1 and Level 2 Wines and will soon be able to deliver Level 1 and Level 2 programs in spirits.
He is continuing his personal development in wines and spirits knowledge by planning to enrol in the WSET Diploma in wines and Level 3 in Spirits.
